The plant, its legends and its botany
Parsley is best known on our plates. In fact, strangely, we know it more visually than gustatorily because the little branch of parsley on the edge of the plate or dish is often wrongly considered as only decorative. It's a shame: not only is it good and full of vitamins A and C, but it freshens breath (especially as it contains chlorophyll).
Its plant is often grown on our balconies or even in our kitchens. And yet who can recognize the flower? Almost no one because we cut parsley leaves before it reaches a flowering size: up to 80 centimetres.
It then shows a ridged rod and umbels of yellow-green flowers that can tend to white. This is actually an umbelliferous. It is biennial but glabrous leaves get a bit tough in the second year, so we do not let them come. Especially as its seeds can be toxic to some idle.
But it's true that it concentrates all its efforts towards its leaves in which it does pour all its energy, smell and taste as well as its medicinal properties.
